Easy wild mushroom and truffle soup served with a little homegrown poached egg. How to….. Rehydrate the wild mushrooms, keep the stock from them. Add 1/2 chopped onion, 2 garlic cloves and the drained rehydrated mushrooms to a frying pan & fry it all, for 5 mins on medium, before adding the stock. Then simmer for 20 mins. Add plant based cream and blend till smooth. Serve with a poached egg and a drizzle of truffle oil! Salt and pepper to your taste. Absolutely no waste!! This pic is my take on a gluten and dairy free English bread pudding. I’d not have one in years but wanted to use the crusts we cut off the sandwiches we made for an event. I didn’t have raisins so I dolloped a couple blobs of dark chocolate, almond milk and suger, then cook for 30 mins. Yummy..

What an amazing afternoon with the Coeliac UK north Hampshire charity and the 30 plus child that came along with their parents for a fun filled Christmas party. It’s been an absolute honour to be catering for it- I loved all our made from scratch pizzas, sausage rolls, bread and all the cute Christmas themed foods. Being able to see the children eat anything from the traditional buffet, without worry and know it’s really good food they are getting, was priceless.
